TBH assassin just feels kinda bad compared to theif. 2 bonus actions is super strong. Dual wielding in general is only useful in niche situations in BG3 because it consumes a bonus action, and there are tons of fun and useful things to do with your bonus action. Using the off-hand takes a bonus action.
